We sell lambs direct market to our customers. This means that you purchase a whole or half lamb from us and are free to use any harvesting and butchering service you wish. We can provide the harvest service if you choose, and can also recommend a butcher. We charge $5.25/lb hanging weight. Our harvest fee is $50, and the recommended butcher charges a flat rate of $80for his cut and wrap service. Our Fall lambs are usually around 30-35 lbs hanging weight, and the Spring lambs generally run around 50 lbs. These are just very general estimates- the weights can vary either higher or lower.
We occasionally have to cull our flock when the ewes get too old to breed and offer our customers the opportunity to purchase the carcass at a reduced price for uses such as dog food. We charge $2.50/lb hanging weight for these, and the same $50 harvest fee. The butcher fee will depend on whether you want to have all the meat ground and how much trimming it requires.
